Quinoa Crust Mac & Cheese Pizza
Ingredients
Vegan Mac & Cheese
- 1 cup cashews, soaked overnight
- 1 red bell pepper, roasted
- 1 medium carrot, roasted or steamed
- 4 cloves garlic
- 1/2 cup water
- Juice of one lemon
- 1/4 cup nutritional yeast
- 1 tsp sea salt
- 1/2 tsp ground coriander
- 1/4 tsp cumin
- 1/4 tsp onion powder
- Cayenne to taste
Quinoa Pizza Crust
- 1 cup quinoa, soaked overnight
- 1 tsp apple cider vinegar
- 1 tsp dried herbs
- 1 tsp garlic powder
- Salt and pepper to taste
Preparation
Vegan Mac & Cheese
Blend all the ingredients until very smooth.
Mix the sauce with your gluten-free noodles.
Quinoa Pizza Crust
Drain the water from the soaked quinoa.
Blend the quinoa with apple cider vinegar, dried herbs, garlic powder, salt, and pepper until a smooth dough forms.
Bake the crust for 15-20 minutes at 425°F (220°C).
Add the prepared Vegan Mac & Cheese on top of the baked crust.
Add extra toppings like mushrooms and onions.
Bake the assembled pizza for a few more minutes.
