Quinoa Crust Mac & Cheese Pizza

Ingredients

Vegan Mac & Cheese

  • 1 cup cashews, soaked overnight
  • 1 red bell pepper, roasted
  • 1 medium carrot, roasted or steamed
  • 4 cloves garlic
  • 1/2 cup water
  • Juice of one lemon
  • 1/4 cup nutritional yeast
  • 1 tsp sea salt
  • 1/2 tsp ground coriander
  • 1/4 tsp cumin
  • 1/4 tsp onion powder
  • Cayenne to taste

Quinoa Pizza Crust

  • 1 cup quinoa, soaked overnight
  • 1 tsp apple cider vinegar
  • 1 tsp dried herbs
  • 1 tsp garlic powder
  • Salt and pepper to taste

Preparation

Vegan Mac & Cheese

  1. Blend all the ingredients until very smooth.

  2. Mix the sauce with your gluten-free noodles.

Quinoa Pizza Crust

  1. Drain the water from the soaked quinoa.

  2. Blend the quinoa with apple cider vinegar, dried herbs, garlic powder, salt, and pepper until a smooth dough forms.

  3. Bake the crust for 15-20 minutes at 425°F (220°C).

  4. Add the prepared Vegan Mac & Cheese on top of the baked crust.

  5. Add extra toppings like mushrooms and onions.

  6. Bake the assembled pizza for a few more minutes.
