Spicy Cherry Tomato and Edamame Pasta
Ingredients
- 500g cherry tomatoes
- 300g edamame pasta
- 8 garlic cloves, peeled
- 2 shallots or 1 onion, peeled and roughly chopped
- 1/2 tsp chilli flakes
- 1 tsp sea salt
- 1 tsp ground cinnamon
- 3 tbsp olive oil
- fresh basil to serve
Preparation
Preheat the oven to 160C.
Chop the cherry tomatoes in half.
Put the tomatoes in a large ovenproof dish.
Add the garlic, onions, spices, salt, and olive oil. Mix well.
Bake for 1 to 1.5 hours, mixing every half hour.
Take it out of the oven and mix together, squishing the garlic.
Cook your pasta and drain, keeping a little of the pasta water.
If the sauce looks a little thick, add some pasta water and mix.
Add the pasta and mix it into the sauce.
Add lots of fresh basil and serve.
Tips
You can use any type of pasta, but edamame pasta adds fiber and protein.
This recipe is gluten-free and vegan.
