Vegan Matzo Roca Dessert

Ingredients

  • 1 cup vegan butter
  • 1 cup brown sugar
  • vegan chocolate chips to cover

Toppings

  • chopped hazelnuts
  • almonds
  • coconut shreds
  • sea salt

Preparation

  1. Lay sheets of matzah on parchment paper or a silicon baking mat and preheat the oven to 350 degrees Fahrenheit.

  2. Bring butter and sugar to a boil, stirring consistently to prevent burning, and cook until it reaches a dark peanut butter color.

  3. Pour the butter mixture over the matzah sheets and spread evenly to coat.

  4. Bake for 10 to 15 minutes.

  5. Add chocolate chips on top and let them melt slightly for even spreading.

  6. Add toppings while the chocolate is melty; if needed, return to the oven for a minute to re-melt.

  7. Freeze until hard, about a couple of hours, then break into pieces.

Tips

  1. Can be made gluten-free by substituting gluten-free matzo.

  2. All ingredients are vegan and dairy-free, making it pareve.
