Peanut Butter Vanilla Truffles
Ingredients
- 1 cup runny peanut butter
- 1/2 cup date paste (8 dates soaked in HOT water + 2-3 Tbsp hot water)
- 1/4 cup HOLOS VANILLA (blended into a fine powder) or vanilla protein powder
- 1 tsp vanilla
- 1/4 tsp sea salt
- 100 grams chopped dark chocolate (melted)
Optional
- 1/2 cup chopped peanuts
- 1/4 cup rose petals
- sea salt for topping
Preparation
Soak your dates in very hot water and set aside for 15 minutes to soften.
Drain the dates, remove pits, and blend in a high-speed blender or food processor until a paste forms, adding water as needed.
Grind a package of HOLOS vanilla into a sand-like texture using a spice grinder, food processor, or blender.
In a medium-sized bowl, combine peanut butter, date paste, 1/4 cup of ground HOLOS powder, and sea salt, then roll into 1-inch balls and refrigerate while melting chocolate.
Place chopped chocolate in a microwaveable bowl and microwave in 30-second increments until fully melted.
Place a ball on a fork, dip into the melted chocolate, and use a spoon to coat, then sprinkle half with chopped peanuts and half with rose petals if using, and add sea salt on top if desired.
