Vegan Hazelnut Cake with Chocolate Glaze

Ingredients

For the dough

  • 200 g brown sugar
  • 250 g soy yogurt (plain or vanilla)
  • 100 ml sunflower oil
  • 200 g flour (Type 405)
  • 200 g ground hazelnuts
  • 3 tsp baking powder

For glaze and decoration

  • 200 g vegan dark chocolate
  • 50 g chopped hazelnuts

Preparation

  1. Preheat oven to 180 degrees Celsius conventional (160 degrees Celsius fan). Rinse a silicone loaf pan (27 x 11 cm) with cold water, do not dry. Whisk together brown sugar, soy yogurt, and oil for the dough.

  2. Mix flour with ground hazelnuts and baking powder and add to the sugar-oil mixture. Stir briefly until a smooth batter forms. Pour batter into the pan and smooth the top. Bake in preheated oven for about 50-55 minutes. Let cake cool completely before removing from the pan.

  3. For the glaze, roughly chop dark chocolate and melt slowly in a double boiler over medium heat. Place cake on a wire rack. Spread glaze evenly over the cake, decorate with chopped hazelnuts. Let glaze set. The cake yields about 10 slices.

Tips

  1. Also delicious as chocolate cake: If you want it more chocolatey, simply stir in 2-3 tbsp cocoa powder and reduce flour by about 30 g.
