Vegan Hazelnut Celebration Cake

Ingredients

  • 200g hazelnut ground
  • 200g flour
  • 1 flax egg (1:4)
  • 50g chopped hazelnuts (from @govindanatur)
  • 3 tsp baking powder
  • A little vanilla
  • A little cinnamon
  • 150g coconut sugar
  • 1 tsp vinegar
  • 180ml plant milk

Preparation

  1. Preheat the oven to 180 degrees Celsius.

  2. In a mixing bowl, combine the hazelnut ground, flour, flax egg, chopped hazelnuts, baking powder, vanilla, cinnamon, and coconut sugar.

  3. Add the vinegar to the plant milk and let it sit for a few minutes to curdle.

  4. Pour the curdled milk into the dry ingredients and mix until well combined.

  5. Transfer the batter to a greased baking tin.

  6. Bake the cake in the preheated oven for about 50 minutes or until a toothpick inserted into the center comes out clean.

  7. Once baked, allow the cake to cool down completely.

  8. Optionally, melt some chocolate and spread it over the cooled cake. Decorate with additional hazelnuts.
