Aromatic Vegetable Pulav with Basmati Rice and Spices

Ingredients

  • 1 1/2 cups basmati rice
  • 2 tablespoons oil or ghee
  • 1 medium onion thinly sliced
  • 2 green chilies slit or as needed
  • 1 to 1 1/2 cups mixed vegetables chopped (carrots, peas, potatoes)
  • salt as needed
  • 2 1/2 cups water for pressure cooker
  • mint finely chopped

Whole spices

  • 1 bay leaf
  • 1 star anise
  • 1 strand mace
  • shahi jeera or caraway seeds or cumin
  • cloves
  • 2 inch cinnamon

Preparation

  1. Heat ghee or oil in a hot pan or cooker.

  2. Fry all the whole spices for a minute until they begin to sizzle.

  3. Fry onions and chilies until onions turn golden.

  4. Add all the veggies and mint. Saute for 2 to 3 minutes. Pour water and add salt too. Taste the water, it has to be slightly salty.

  5. Bring the water to a rolling boil. Add drained rice and stir.

  6. If cooking in pot, cook on a medium heat until all the water is absorbed. Cover and cook on a low flame for 4 to 5 minutes until the rice is done fully.

  7. Serve veg pulao hot or warm with a simple raita or gravy.
