Indian Pani Puri Street Snack
Ingredients
Puri
- 1 cup semolina or fine semolina
- 1/4 cup wheat flour
- 1/2 cup hot water
- Pinch of salt
Potato filling
- 5 boiled potatoes
- 1 tablespoon chili powder
- 1 tablespoon pani puri masala
- Salt to taste
- 1 large onion
- Chopped coriander leaves
Mint water
- Handful of coriander leaves
- 1/2 handful mint leaves
- 1 inch ginger
- 2-3 bird's eye chilies
- 1/4 cup tamarind juice
- 2 cups water
- 1 tablespoon pani puri masala
- 1/4 teaspoon black pepper powder
- Salt to taste
- Lemon
Tamarind water
- 2 tablespoons tamarind paste
- 1 block palm sugar
- 5 pitted dates
- 2 cups water
- 1 teaspoon pani puri masala
- 1/2 teaspoon chili powder
- Salt to taste
Preparation
Puri
Mix semolina, wheat flour, and salt then make a well in the center.
Gradually add hot water while kneading to form a dough, knead for 5 minutes, cover with a damp cloth, and rest for 20 minutes.
Knead again for 2-3 minutes until smooth.
Divide the dough into two parts, roll out thinly, cut into small circles, and fry in medium heat oil until puffed and crispy.
Potato filling
Mash the boiled potatoes.
Mix with chili powder, pani puri masala, and salt to taste.
Add diced onion and chopped coriander leaves, stir well and add sliced bird's eye chilies if desired for extra spice.
Mint water
Combine coriander leaves, mint leaves, ginger, bird's eye chilies, tamarind juice, and water, blend until smooth and strain.
Add pani puri masala and black pepper powder, stir well and season with salt and lemon juice to taste.
Tamarind water
Boil tamarind paste, palm sugar, pitted dates, and water until dates are soft.
Blend until pureed then strain for a smooth mixture.
Add pani puri masala, chili powder, and salt to taste.
Assembly
Crack each puri, fill with potato mixture, and pour mint water and tamarind water over it to serve.
