Peanut Coconut Noodle Bowl

Ingredients

  • 225g soba noodles
  • 2 handfuls of sweet peas
  • 1 lime
  • 1 chili
  • 2 handfuls of cilantro
  • 1 garlic clove
  • 1 can coconut milk
  • 1 handful of peanuts
  • 2 tablespoons olive oil
  • Salt and pepper
  • 1 tablespoon peanut butter
  • 1 tablespoon yellow curry paste

Preparation

  1. Chop the chili into small pieces.

  2. Peel the zest of the lime and squeeze out the juice.

  3. Chop the cilantro.

  4. Roughly grind the peanuts.

  5. Chop the garlic into tiny pieces.

  6. Cut the sweet peas in half.

  7. Heat up oil in a pan.

  8. Fry the curry paste and garlic.

  9. Add coconut milk, chili, sweet peas, peanut butter, and about a teaspoon of salt.

  10. Cook the soba noodles for about three minutes.

  11. Add the cooked noodles to the pan and mix well.

  12. Add half of the cilantro, three tablespoons of lime juice, and 2 teaspoons of lime zest.

  13. Serve with crunchy peanuts and more cilantro on top.
