Spiced Beef Stew

Ingredients

  • 1/2 teaspoon ground mastic
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon cardamom
  • 1 teaspoon turmeric
  • 1 teaspoon black pepper
  • 1 tablespoon salt
  • 3 bay leaves
  • 5 whole cardamom pods
  • 1 piece beef thigh
  • 1 medium onion, quartered
  • 1 tablespoon sugar
  • 1 medium tomato, quartered

For sautéing

  • 1 tablespoon ghee
  • 1 medium onion, sliced
  • 4 cloves crushed garlic
  • 2 green peppers, chopped
  • 1 large red bell pepper, cut into small strips

Preparation

  1. In a dish, place the ground mastic, cardamom, cumin, coriander, paprika, salt, and pepper, mix to combine

  2. In a pot, heat the ghee, add the meat and stir several times until it becomes golden brown

  3. Sprinkle half the amount of spices, sprinkle sugar on the meat and continue sautéing

  4. Add bay leaves, whole cardamom, onion, tomato and continue sautéing

  5. Cover the meat with boiling water, cover the pot and leave it to cook

  6. Remove the meat, let it cool, cut into cubes as desired

  7. In a skillet, heat the ghee, add onion, garlic, pepper, and sauté lightly

  8. Add the meat, sprinkle the remaining spices, sauté the meat to get a nice color and serve
