Arabic Style Okra Stew
Ingredients
- 4 tablespoons corn oil
- 1 kilogram meat
- 1 onion
- 2 teaspoons salt
- 5 cardamom pods
- 1 cinnamon stick
- 4 garlic cloves
- 1 onion
- 1/2 teaspoon black pepper
- 1 teaspoon coriander
- 1 teaspoon cardamom
- 1 teaspoon cinnamon
- 1 package okra
- 3 tomatoes
- 2 tablespoons tomato paste
- 3 green bell peppers
Preparation
In a pot, put 2 tablespoons of oil, place the pot on high heat, add the meat and stir several times until it browns, cover it with water, add the onion, one teaspoon of salt, cardamom, and cinnamon, leave it on medium heat until cooked and most water is absorbed, then drain the meat and keep the broth aside.
In a pot, put the remaining oil and sear the meat pieces to gain a delicious flavor, add the garlic, onion, and stir until it gets a golden color, then add the salt, pepper, coriander, cardamom, cinnamon, and stir to mix with the meat.
Add the okra and stir it with the meat, add a little of the broth, and leave it for a few minutes so the okra absorbs the broth, as this gives it a delicious taste.
Blend the tomatoes to make juice.
Add the tomato juice, tomato paste, bell peppers, and the remaining broth so that the okra is covered with broth.
Leave the okra on low heat to simmer well then serve it.
