Chickpea Penne Pasta with Zucchini and Ricotta

Ingredients

  • Olive oil
  • Zucchini
  • Onion
  • Chickpea penne
  • Plant-based ricotta
  • Organic spinach

Preparation

  1. Heat olive oil in a pan then add chopped onion and zucchini and sauté until tender.

  2. Cook pasta and once done, drain and reserve about 1/3 cup of the pasta water.

  3. Add penne and spinach to the pan with the other ingredients, lowering the heat to a simmer.

  4. Add the ricotta and a little bit of the water at a time, until desired consistency. Top with salt and pepper.
