Chickpea Penne Pasta with Zucchini and Ricotta
Ingredients
- Olive oil
- Zucchini
- Onion
- Chickpea penne
- Plant-based ricotta
- Organic spinach
Preparation
Heat olive oil in a pan then add chopped onion and zucchini and sauté until tender.
Cook pasta and once done, drain and reserve about 1/3 cup of the pasta water.
Add penne and spinach to the pan with the other ingredients, lowering the heat to a simmer.
Add the ricotta and a little bit of the water at a time, until desired consistency. Top with salt and pepper.
