Almond Sweet Potato Salad

Ingredients

  • Kale, finely chopped
  • 1/2 red onion, chopped
  • 1 sweet potato, cut into small cubes
  • Cucumber, finely chopped
  • 1 tomato, finely chopped
  • Fresh cilantro or parsley
  • 1/2 cup almonds
  • Coconut oil
  • Italian seasoning

Dressing

  • 2 tablespoons apple cider vinegar
  • 1/2 tablespoon natural sweetener
  • 1/4 teaspoon salt
  • 1/4 teaspoon coriander or Italian seasoning

Preparation

  1. Chop the sweet potato into small cubes, drizzle with coconut oil, season with Italian seasoning, and bake at 350°F for 20-25 minutes or until cooked.

  2. Prepare the vegetables by chopping them if necessary and mix the dressing ingredients together.

  3. Combine the prepared vegetables, dressing, almonds, and baked sweet potato, and mix until well combined.
