Goji Berry Quinoa Bowl
Ingredients
- 1c quinoa (cooked)
- 2c red cabbage (shredded)
- 2c kale (chopped)
- 1 tomato (chopped)
- 1/2-2/3 cup almonds
- 1/3 cup goji berries
- dressing
- 1/2 avocado
- 1t lemon juice
- 1tsp natural sweetener (coconut nectar, agave, 1/8tsp stevia)
- 1tsp coriander
- 1/4tsp salt
- 1/4tsp cayenne pepper
Preparation
Prepare the dressing and veggies
Combine everything and mix until well combined
