Goji Berry Quinoa Bowl

Ingredients

  • 1C quinoa (cooked)
  • 2C Red cabbage (shredded)
  • 2C Kale (chopped)
  • 1 tomato (chopped)
  • 1/2-2/3 cup almonds
  • 1/3 cup goji berries

Dressing

  • 1/2 avocado
  • 1T lemon juice
  • 1tsp natural sweetener (coconut nectar, agave, 1/8tsp stevia)
  • 1tsp coriander
  • 1/4tsp salt
  • 1/4tsp cayenne pepper

Preparation

  1. Prepare the dressing and veggies

  2. Combine everything and mix until well combined
