Avocado Pesto with Zucchini Noodles and Mushrooms
Ingredients
Avo pesto
- 1 Cup Fresh Basil
- 1/2 Avocado
- 1/2 Cup Water
- 1/4 Cup Nutritional Yeast
- 1/4 Cup Pine Nuts (or raw cashews & walnuts work too)
- 2 Cloves Garlic
- Juice of 1 lime or lemon
- Salt
- pepper to taste
Zucchini noodles and mushrooms
- Zucchini noodles
- Mushrooms
Preparation
Fill a large pot 3/4 full with water and bring to a boil.
To a food processor, add basil, avocado, water, nutritional yeast, pine nuts, garlic, lime juice and salt and pepper to taste. Mix to combine.
Continue blending, scraping down sides as needed, until creamy and fully combined. If it has trouble blending add a bit more water.
Cook zucchini noodles and mushrooms in the boiling water until tender, then drain.
Add the pesto to the cooked noodles and mushrooms, toss to combine, or use the pesto as a dipping sauce. Enjoy!
