Battered Baked Cauliflower with Sesame Sauce

Ingredients

  • 1 large head cauliflower, cut into florets

Batter

  • 1 cup dried TVP
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 2 cups oat milk
  • 1/2 cup water

Sesame sauce

  • 2 tablespoons sesame oil
  • 2 tablespoons minced ginger
  • 1 teaspoon garlic powder
  • 1/4 cup pure maple syrup
  • 1/4 cup soy sauce
  • 4 tablespoons tomato paste
  • 1 tablespoon rice vinegar
  • 1 cup water
  • 1.5 tablespoons cornstarch

Preparation

  1. Preheat the oven to 450°F and line two baking sheets with parchment paper.

  2. Add the dried TVP to a food processor or blender and process until it becomes a flour-like consistency.

  3. Mix the processed TVP with the flour, baking soda, salt, garlic powder, oat milk, and water to make the batter, then let it sit for 10 minutes.

  4. Dunk the cauliflower florets into the batter and place them on the prepared baking sheets.

  5. Bake for 15 minutes, then flip the cauliflower and bake for another 15 minutes. Optionally, spray with oil after the initial bake.

  6. In a saucepan, mix all the sauce ingredients and heat until bubbling and thick.

  7. Pour the sauce over the baked cauliflower, mix to cover, and bake for an additional 7 minutes.

  8. Top with sesame seeds and serve.
