Blood Orange N Vanilla Bean Cheezecake

Ingredients

  • 2 cups coconut flakes
  • 1 cup cashews
  • 1/2 cup ground almonds
  • 3 pitted medjool dates
  • 2 tbsp maple syrup
  • 1/4 tsp cinnamon
  • 1/4 tsp salt.
  • 2.5 cups cashews (soaked 6hrs min)
  • flesh of 4 blood oranges
  • 1.5 tsp vanilla powder or paste
  • 1/2 cup maple syrup
  • 3/4 cup plain vegan yoghurt
  • 1 tbsp lime juice
  • 1 tsp orange blossom water (optional)
  • 1/3 cup melted coconut butter.

Preparation

  1. Blend all the ingredients apart from the coconut butter until completely smooth and creamy. Then add the coconut butter and blend further for 30 seconds. Pour the mixture on top of the base and freeze for at least 6 hours or overnight

  2. Remove the cake from its tin once set and decorate with 2-3 sliced blood oranges. Defrost for 1 hour before serving ♡

  3. This recipe makes a large 9inch cake, you could half the ingredients and use a smaller tin if desired
