Cauliflower Steak with Chimichurri

Ingredients

  • 1 small head cauliflower

Chimichurri

  • 2 cups packed fresh parsley
  • 4 cloves garlic crushed
  • 1 shallot
  • 1 chilli pepper finely diced
  • the juice from 1/2 lemon
  • 1/4 cup red wine vinegar
  • 2/3 cup extra virgin olive oil
  • 1/4 tsp salt
  • 2 tbsp fresh oregano

Preparation

  1. Preheat oven to 400°F (200°C) or prepare a grill for medium-high heat

  2. Slice the cauliflower head into 1-inch thick steaks

  3. Place the cauliflower steaks on a baking sheet or grill grate, and cook for 20-25 minutes or until golden and tender, flipping halfway through

  4. While the cauliflower is cooking, prepare the chimichurri by combining all chimichurri ingredients in a bowl and mixing well, or blending in a food processor for a smoother texture

  5. Serve the cauliflower steaks topped with the chimichurri sauce
