Cauliflower Steak with Chimichurri
Ingredients
- 1 small head cauliflower
Chimichurri
- 2 cups packed fresh parsley
- 4 cloves garlic crushed
- 1 shallot
- 1 chilli pepper finely diced
- the juice from 1/2 lemon
- 1/4 cup red wine vinegar
- 2/3 cup extra virgin olive oil
- 1/4 tsp salt
- 2 tbsp fresh oregano
Preparation
Preheat oven to 400°F (200°C) or prepare a grill for medium-high heat
Slice the cauliflower head into 1-inch thick steaks
Place the cauliflower steaks on a baking sheet or grill grate, and cook for 20-25 minutes or until golden and tender, flipping halfway through
While the cauliflower is cooking, prepare the chimichurri by combining all chimichurri ingredients in a bowl and mixing well, or blending in a food processor for a smoother texture
Serve the cauliflower steaks topped with the chimichurri sauce
