Chickpea Carrot Bowl

Ingredients

  • 3 cups of raw chickpeas, soaked overnight⁣
  • 2 cups of water⁣
  • 3 cups of vegetable broth⁣
  • 4 garlic cloves minced⁣
  • 4 bay leaves⁣
  • 2 tbs of olive oil⁣
  • 2 cups of chopped carrots⁣
  • 1 tsp of turmeric⁣
  • 1/2 tsp of ginger powder⁣
  • 1/4 tsp of cumin⁣
  • 1/2 tsp of dried thyme⁣
  • 1 1/2 cups of peas⁣
  • salt/pepper to taste⁣

Preparation

  1. In a hot pan, place chickpeas, water, vegetable broth, garlic, bay leaves, and oil. Cook for approximately 40 minutes or until chickpeas are soft.⁣

  2. Add chopped carrots, turmeric, ginger powder, cumin and thyme . Cook for another 10 minutes.⁣

  3. Minutes before serving, add peas and salt/pepper and stir.⁣

  4. Enjoy it
