Chickpea Carrot Bowl
Ingredients
- 3 cups of raw chickpeas, soaked overnight
- 2 cups of water
- 3 cups of vegetable broth
- 4 garlic cloves minced
- 4 bay leaves
- 2 tbs of olive oil
- 2 cups of chopped carrots
- 1 tsp of turmeric
- 1/2 tsp of ginger powder
- 1/4 tsp of cumin
- 1/2 tsp of dried thyme
- 1 1/2 cups of peas
- salt/pepper to taste
Preparation
In a hot pan, place chickpeas, water, vegetable broth, garlic, bay leaves, and oil. Cook for approximately 40 minutes or until chickpeas are soft.
Add chopped carrots, turmeric, ginger powder, cumin and thyme . Cook for another 10 minutes.
Minutes before serving, add peas and salt/pepper and stir.
