Comforting Lentil Vegetable Soup

Ingredients

  • 2 small onions
  • 1 cup broccoli florets
  • 2 carrots
  • 6 small white potatoes
  • 1 16-ounce bag brown lentils or black beans, chickpeas, or pinto beans
  • 1 15.5-ounce can diced tomatoes
  • 8 cups vegetable broth or water
  • 1-2 cups spinach or kale
  • 1 cup corn (frozen or fresh)
  • 1 cup fresh basil and cilantro
  • Lemon, salt and pepper to taste

Preparation

  1. Combine all ingredients, except the spinach, and cook on low for 2 hours.

  2. Add the spinach about 5 minutes before the soup is done.

  3. Season to taste with salt and pepper.
