Comforting Lentil Vegetable Soup
Ingredients
- 2 small onions
- 1 cup broccoli florets
- 2 carrots
- 6 small white potatoes
- 1 16-ounce bag brown lentils or black beans, chickpeas, or pinto beans
- 1 15.5-ounce can diced tomatoes
- 8 cups vegetable broth or water
- 1-2 cups spinach or kale
- 1 cup corn (frozen or fresh)
- 1 cup fresh basil and cilantro
- Lemon, salt and pepper to taste
Preparation
Combine all ingredients, except the spinach, and cook on low for 2 hours.
Add the spinach about 5 minutes before the soup is done.
Season to taste with salt and pepper.
