Crispy Vegan Bang Bang Broccoli

Ingredients

  • 1–2 heads broccoli, cut into florets

Batter

  • 1 cup plant milk
  • 3/4 cup chickpea flour
  • 1/4 cup arrowroot flour or cornstarch
  • 1/2 teaspoon salt
  • black pepper to taste
  • 1 teaspoon apple cider vinegar

Bang bang sauce

  • 1/2 cup cashew butter or tahini
  • 1 teaspoon lemon juice
  • 1 tablespoon apple cider vinegar
  • pinch pepper
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • black pepper to taste
  • 1/2 cup water
  • 2 tablespoons sriracha
  • 1 tablespoon maple syrup

Preparation

  1. Preheat oven to 400 degrees

  2. Mix together your batter ingredients until a thick paste forms

  3. Dip broccoli florets in batter and place on a sheet pan

  4. Roast for 20 minutes

  5. While broccoli is roasting mix together your bang bang sauce until smooth

  6. At the end of the 20 minutes remove broccoli from oven

  7. Carefully dip broccoli florets into bang bang sauce and bake for 10-15 more minutes or until crisp

  8. Let cool and serve broccoli with desired sides
