Cypriot Hummus Soup
Ingredients
- 4 cups cooked chickpeas
- 1 cup tahini
- 3 cloves garlic, chopped
- 2 tsp salt
- juice of 2 lemons
To serve
- croutons
- parsley
- olives
- olive oil
- spring onion
- extra lemon
Preparation
Put the chickpeas in a large pan of water and bring to the boil. Simmer for ten minutes. Drain but keep back the water. Set aside.
Put the chickpeas in a large bowl, add the garlic, lemon, salt and tahini, and one cup of the chickpea water. Blend till smooth using a stick blender or in a food processor. Add another 5 cups of the chickpea water to the chickpeas and discard the rest. Blend again.
Return the soup to the pan and cook for a few minutes. It’s ready.
Serve with extra lemon, olive oil, croutons, olives, spring onion and parsley. Top your soup with whatever you like and enjoy.
Tips
You can use dried chickpeas; soak, drain, and cook them until tender to yield 4 cups cooked.
