Dan Dan Noodles with Ginger Peanut Sauce

Ingredients

  • 200g soba noodles
  • 200g green beans
  • bunch of coriander
  • 1 spring onion, thinly sliced
  • 2 tbsp toasted sesame seeds
  • Sea salt and black pepper

Peanut sauce

  • 3 tbsp crunchy peanut butter
  • 1/2 tsp mashed garlic
  • Zest of 2 limes and the juice of 3
  • 2 1/2 tbsp chopped or grated ginger
  • 3 tbsp Chinese rice vinegar
  • 3 tbsp soya sauce

Preparation

  1. Set two large saucepans to boil and salt one of them.

  2. Add the green beans to the salted pan and blanch for 3-4 minutes before draining and running under cold water.

  3. Add the soba noodles to the second pan and cook according to the packet instructions, then drain and rinse in cold water to stop them from sticking and set aside.

  4. In a small bowl, add all the peanut sauce ingredients together and whisk together.

  5. Taste to check the seasoning is to your taste.

  6. Add cold water to loosen the sauce if desired.

  7. Toss together with the noodles and beans.

  8. Top with the coriander leaves, spring onion, and sesame seeds.
