Easy Vegan Tomato Soup with Superfood Boost

Ingredients

  • 2 tsp olive oil
  • 1 onion
  • 3 cloves of garlic (finely chopped)
  • 1 red pepper
  • 7 cups of chopped tomatoes
  • large handful of basil
  • 1 tbsp Green Superblend Powder
  • seasoning - salt, pepper and a dash of olive oil to serve

Preparation

  1. Sauté the garlic and onion in the olive oil.

  2. Add the red pepper and tomatoes and cook until they soften.

  3. Add the basil, Green Superblend and seasoning, transfer to a blender and blend until smooth or to the texture you would like.

  4. Serve and enjoy your hit of superfood goodness; you can store any leftovers in the fridge.
