Falafel Bowl with Spicy Tzatziki

Ingredients

  • 1 Trader Joe’s Middle Eastern Flatbread
  • 3 Falafel from @fabalishfoods
  • 2 Tbsp Quinoa, cooked
  • 1/2 Persian Cucumber
  • 3-4 mini heirloom Tomatoes
  • Fresh Parsley & Cilantro

Spicy tzatziki

  • 1 cup vegan yogurt (I used coconut)
  • 1/4 cup grated cucumber
  • 1 Tsp paprika
  • 1 Tsp cayenne
  • 1 Tbsp minced garlic
  • 2 Tbsp dried dill
  • 1 Tbsp lemon juice
  • 2 Tbsp EVOO

Preparation

  1. Air fry the falafel at 375°F for 10 minutes, then rotate and air fry for another 10-15 minutes.

  2. Dice the vegetables, prepare the herbs, and grate the cucumber for the sauce.

  3. Combine all sauce ingredients in a bowl, stir to mix, and refrigerate immediately.

  4. Assemble by spreading the sauce on the flatbread and adding all ingredients on top.
