Falafel Bowl with Spicy Tzatziki
Ingredients
- 1 Trader Joe’s Middle Eastern Flatbread
- 3 Falafel from @fabalishfoods
- 2 Tbsp Quinoa, cooked
- 1/2 Persian Cucumber
- 3-4 mini heirloom Tomatoes
- Fresh Parsley & Cilantro
Spicy tzatziki
- 1 cup vegan yogurt (I used coconut)
- 1/4 cup grated cucumber
- 1 Tsp paprika
- 1 Tsp cayenne
- 1 Tbsp minced garlic
- 2 Tbsp dried dill
- 1 Tbsp lemon juice
- 2 Tbsp EVOO
Preparation
Air fry the falafel at 375°F for 10 minutes, then rotate and air fry for another 10-15 minutes.
Dice the vegetables, prepare the herbs, and grate the cucumber for the sauce.
Combine all sauce ingredients in a bowl, stir to mix, and refrigerate immediately.
Assemble by spreading the sauce on the flatbread and adding all ingredients on top.
