Gluten-Free Low-Carb Lettuce Wraps

Ingredients

  • 1/2 block firm tofu
  • 3/4 cup chopped jicama
  • 1/2 cup toasted cashews
  • 1/2 cup mixed vegetables (peas, carrots, roasted corn)
  • 1/4 cup chopped mushrooms
  • 2 tbsp stir fry sauce
  • 1 tbsp soy sauce or tamari
  • Salt to taste
  • Sesame oil
  • Hoisin sauce for serving
  • Butter lettuce

Preparation

  1. In a heated pan with 1 tablespoon sesame oil, pan-fry tofu until golden brown.

  2. Add mushrooms, mixed vegetables, jicama, and all sauces, then coat well.

  3. Turn off the heat and stir in the cashews.

  4. Serve with butter lettuce, sesame seeds, and a little hoisin sauce.
