Lemony Tomato & Black Garlic Pasta Sauce

Ingredients

  • 2 cups Cooked Pasta
  • 1 Red Bell Pepper
  • 1 cup Mushrooms
  • 1/4 cup Extra Virgin Olive Oil
  • 3 tbsp Lemon Juice
  • 3 tbsp @laylislayers Tomato & Black Garlic
  • Fresh Parsley
  • Vegan Parmesan (optional)
  • Salt & Pepper to taste

Preparation

  1. Cook the pasta al dente according to the package instructions. Drain and drizzle with olive oil to prevent sticking.

  2. Dice the red bell pepper and mushrooms. Heat a large pan over medium heat and cook the bell pepper and mushrooms for 7-10 minutes. Season with salt and pepper.

  3. Add the cooked pasta to the pan. Immediately add the extra virgin olive oil, Tomato & Black Garlic Layer from @laylislayers, and lemon juice. Toss the pasta to incorporate the sauce well.

  4. Turn off the heat after about 2 minutes or until the pasta is heated through. Serve and garnish with fresh parsley and vegan Parmesan cheese, if desired.
