Vegan Burnt Butter Sage Tortellini

Ingredients

  • 1 packet vegan tortellini (e.g., Kite Hill Foods brand)
  • 3 tbsp vegan butter (e.g., Earth Balance brand)
  • 20 fresh sage leaves
  • 1 cup vegan parmesan (e.g., Violife Foods brand)
  • Salt and pepper to taste

Preparation

  1. Bring a large pot of heavily salted water to a boil. Cook the tortellini according to the instructions on the packet.

  2. In a large saucepan over medium heat, melt the vegan butter. Add in the sage leaves and cook until the butter bubbles and the sage starts to shrivel.

  3. Add the cooked tortellini directly into the saucepan along with 1/3 cup of pasta water. Cook for about 1 minute until the sauce thickens and reduces slightly.

  4. Grate in the vegan parmesan and stir until smooth and creamy.

  5. Season with salt and pepper to taste.

  6. Enjoy!
