Noodles in Mushroom Coconut Broth
Ingredients
- 1 stick lemongrass
- 2 red chilies
- 1 clove garlic
- 1 inch ginger
- 2 kaffir lime leaves
- Handful coriander stems with leaves
- 5 chestnut mushrooms
- 1 sliced onion
- 1 tablespoon miso paste
- 1 tablespoon soya sauce
- 1 teaspoon white pepper
- 1 tablespoon wasabi paste or mustard
- 100g shiitake or chestnut mushrooms (optional)
- 1 cup coconut cream
- 1 cup water
- 1 tablespoon sesame oil
- Cooked noodles of choice for 3 portions
Preparation
Pound together lemongrass, red chili, ginger, garlic, kaffir lime leaves, coriander and mushrooms using a mortar and pestle or food processor.
Heat sesame oil in a pan. Add the paste and onions. Fry on medium heat for 5-7 minutes.
If using mushrooms, add them at this stage and sweat them down.
Mix in miso paste, wasabi or mustard, soya sauce and white pepper.
Add coconut cream and water. Bring to a simmer.
Add noodles and season as desired.
