Noodles in Mushroom Coconut Broth

Ingredients

  • 1 stick lemongrass
  • 2 red chilies
  • 1 clove garlic
  • 1 inch ginger
  • 2 kaffir lime leaves
  • Handful coriander stems with leaves
  • 5 chestnut mushrooms
  • 1 sliced onion
  • 1 tablespoon miso paste
  • 1 tablespoon soya sauce
  • 1 teaspoon white pepper
  • 1 tablespoon wasabi paste or mustard
  • 100g shiitake or chestnut mushrooms (optional)
  • 1 cup coconut cream
  • 1 cup water
  • 1 tablespoon sesame oil
  • Cooked noodles of choice for 3 portions

Preparation

  1. Pound together lemongrass, red chili, ginger, garlic, kaffir lime leaves, coriander and mushrooms using a mortar and pestle or food processor.

  2. Heat sesame oil in a pan. Add the paste and onions. Fry on medium heat for 5-7 minutes.

  3. If using mushrooms, add them at this stage and sweat them down.

  4. Mix in miso paste, wasabi or mustard, soya sauce and white pepper.

  5. Add coconut cream and water. Bring to a simmer.

  6. Add noodles and season as desired.
