Salted Peanut Caramel Bars

Ingredients

Base

  • 200 g dried apricots or dates
  • 80 g nuts (e.g., almonds/cashews/walnuts or a mix)
  • 30 g protein powder (e.g., 3k Vanilla-Toffee) or more flour
  • approximately 80 g oat flour (ground or finely mixed oats)

Peanut caramel

  • 2 tablespoons peanut butter
  • 2 tablespoons maple syrup
  • a pinch of salt

Topping

  • approximately 50 g dark chocolate (optional: sugar-free)

Preparation

  1. Roughly mix the apricots in a chopper or finely chop them by hand with a knife.

  2. Roughly chop the nuts in a mixer as well.

  3. Knead all ingredients for the base into a dough.

  4. If the mixture is too dry, add some water.

  5. Press the mixture into a square form lined with baking paper or cling film to ease removal later.

  6. Mix the peanut butter with the maple syrup and spread it on the base.

  7. Refrigerate everything for about 20 minutes.

  8. Melt the chocolate and spread it on top.

  9. Return the form to the refrigerator until the chocolate sets.

  10. For cutting, dip the knife in hot water beforehand.
