Simple One-Pan Lentil and Sweet Potato Bake

Ingredients

  • 1 cup brown lentils
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 stalks celery, diced
  • 2 medium carrots, diced
  • 1-2 cups green beans, halved
  • 6 sprigs fresh thyme or 1 tsp dried thyme
  • 1 tsp salt
  • 4 cups veggie broth
  • Sweet potatoes, with skins

Preparation

  1. Preheat oven to 375 F.

  2. In a 9x13-inch baking dish, mix together all ingredients except sweet potatoes and fresh thyme. If using dried thyme, add it in.

  3. Cut a slit in the sweet potatoes and place them cut side down on top of the mixture.

  4. For larger sweet potatoes, cut them in half and place cut side down.

  5. Use as many sweet potatoes as needed to cover the dish.

  6. If using fresh thyme, top with it.

  7. Cover the dish with aluminum foil.

  8. Bake for 60 minutes.

  9. Uncover and bake for an additional 10 to 15 minutes.

  10. Test the lentils for softness and continue baking uncovered if necessary.
