Simple Sugar-Free Vegan Strawberry Tarts
Ingredients
Pastry
- 200g plain flour
- pinch of salt
- 100g vegan margarine
- 3 tbsp olive oil
Filling
- 3 cups chopped strawberries
- 2 tbsp cornflour
- Juice of 1/2 lemon
Preparation
Add flour, salt, and vegan margarine to a food processor and pulse until crumbly. If you don't have a food processor, cut together with a fork. Mix 3 tablespoons olive oil with 3 tablespoons cold water and add to the food processor or bowl. Pulse or combine until a dough is formed.
Wrap the dough in clingfilm and chill for at least 30 minutes.
Preheat the oven to 200°C.
In a medium bowl, mix the strawberries with cornflour and lemon juice, then set aside.
Remove the pastry from the fridge, roll out on a lightly floured surface, cut to size for tart tins, and gently press into the tins.
Fill the tarts with the strawberry mixture and top with your favorite pastry design.
Bake for 10-15 minutes until the pastry is golden.
Tips
Blueberries can be used instead of strawberries if unavailable.
