Spicy Sausage&Tomato Pasta
Ingredients
- 2 dried ancho chillies
- 2 tsp fennel seeds
- 1 tbsp olive oil
- 600g vegan sausage
- 1 tbsp dried oregano
- 1 cup vegetable stock
- zest and juice of 1 lemon
- 500g gf spaghetti
- 1/4 cup nutritional yeast
- bunch flat leaf parsley chopped
Preparation
When the pasta has cooked, drain it in a colander, reserving a cup of the cooking water
Add the pasta to the pan, then toss to coat, loosening the pasta with a splash of the reserved cooking water, if needed
Stir in the nutritional yeast and add the parsley leaves
Season to taste and serve immediately
