Spicy Sausage&Tomato Pasta

Ingredients

  • 2 dried ancho chillies
  • 2 tsp fennel seeds
  • 1 tbsp olive oil
  • 600g vegan sausage
  • 1 tbsp dried oregano
  • 1 cup vegetable stock
  • zest and juice of 1 lemon
  • 500g gf spaghetti
  • 1/4 cup nutritional yeast
  • bunch flat leaf parsley chopped

Preparation

  1. When the pasta has cooked, drain it in a colander, reserving a cup of the cooking water

  2. Add the pasta to the pan, then toss to coat, loosening the pasta with a splash of the reserved cooking water, if needed

  3. Stir in the nutritional yeast and add the parsley leaves

  4. Season to taste and serve immediately
