Spoonable Mixed Vegetable Pickle

Ingredients

  • 0.5 kg gherkin cucumbers
  • 0.5 kg acur cucumbers
  • 2 large chopped garlic cloves
  • 1.5 kg tomatoes
  • 20-25 sweet green peppers
  • 3 red bell peppers
  • 5 large carrots
  • half of a medium cabbage
  • 1 bunch parsley
  • 1 heaping tablespoon coarse pickling salt (for mixing vegetables)

Brine

  • 1 heaping tablespoon coarse salt (per 1-liter jar)
  • 1 teaspoon sugar (per 1-liter jar)
  • 1 teaspoon citric acid (per 1-liter jar)
  • 1/3 cup grape vinegar (per 1-liter jar, adjustable to taste)
  • cold water to fill jar

Preparation

  1. Chop the garlic, peppers, carrots, cabbage, and parsley into desired sizes

  2. Mix all the vegetables together with the heaping tablespoon of coarse pickling salt

  3. Pack the salted vegetable mixture tightly into clean 1-liter glass jars

  4. Prepare the brine by combining coarse salt, sugar, citric acid, and grape vinegar for each jar

  5. Pour the brine over the vegetables in the jars and fill with cold water to cover completely

  6. Seal the jars tightly and store in a cool, dark place to ferment for several days to weeks until the desired flavor develops

Tips

  1. Adjust the amount of vinegar to suit your personal taste preference

  2. Ensure jars are sterilized before use to prevent spoilage during fermentation
