Tofu Thai Green Curry with Brown Rice
Ingredients

- soya milk
- brown rice
Preparation
Fry chunky cubes of tofu in a pan until golden.
Add sugar snap peas, yellow pepper, baby corn, garlic, red onion, and broccoli, then stir-fry until vegetables are slightly softened.
Stir in curry paste and soya milk, then cook until the mixture is heated through and vegetables are tender.
Serve the curry with brown rice.
Tips
Use soya milk instead of coconut milk to reduce fat content.
