Vegan Cheesy Garlic Mushroom Spinach Pizza Toasts
Ingredients
Dough
- 1/2 lbs batch pizza dough (gluten-free, if desired)
Spinach cheese mixture
- 7 oz spinach (200 g)
- 3 garlic cloves
- salt and pepper to taste
- 2/3 cup dairy-free cream cheese (150 g)
- 3/4 cup dairy-free cheese shredded (75 g)
Roasted mushrooms
- 1 tbsp olive oil
- 5 oz mushrooms (150 g)
- salt to taste
Topping
- 2 tbsp pine nuts
Preparation
Heat the oven to 400°F (200°C).
Roll out the pizza dough with a rolling pin and place it on a baking sheet lined with parchment paper.
If using frozen spinach, thaw and squeeze out the liquid. If using fresh spinach, boil in salted water for 1-2 minutes until wilted, then squeeze and chop roughly.
Heat a little oil in a small pan, roast garlic for 30 seconds while stirring, then add the cream cheese and spinach, season with salt and pepper to taste, and stir to combine.
Spread the spinach mixture over the pizza dough and top with the shredded vegan cheese.
Bake the pizza for 10-15 minutes until the cheese is melted.
Meanwhile, fry the mushrooms in a pan with oil for 6-8 minutes until golden brown and season with salt to taste.
In another pan, toast the pine nuts without adding any oil.
Once the pizza is baked, top it with the mushrooms and pine nuts if using.
