Vegan Fried Rice with Curry and Chorizo

Ingredients

  • 1/2 onion
  • 1 carrot
  • 1/2 zucchini
  • 1/2 head of broccoli
  • 2 sausages, vegan chorizo (140g)
  • 2 dl green peas
  • 1 tbsp curry powder
  • 1 tbsp paprika powder
  • 1 tbsp soy sauce
  • 1 tsp turmeric
  • Salt and pepper
  • 2 dl rice

Preparation

  1. Start with cooking your rice.

  2. Meanwhile chop the veggies and the sausage into small cubes or pieces.

  3. Fry them off in some oil in a big pan.

  4. When the veggies are starting to get some colour, add your spices.

  5. Also add the rice when it is done and combine everything together.

  6. Serve and enjoy.
