Vegan Green Goddess Pesto Bowl
Ingredients
- Split pea pasta
- Kale
- Zucchini
- Green peas
- Pine nuts
Pesto
- 2 cups chopped raw kale
- 1 handful parsley
- 1 avocado
- 1/3 cup toasted pine nuts
- Juice of 1 lemon
- 3 tablespoons olive oil
- 3 cloves garlic
- Salt and pepper
- 7 to 10 tablespoons water
Preparation
Toast the pine nuts in a pan for a few minutes until golden brown.
Add the pesto ingredients to a food processor, blend, and add water gradually to reach the desired consistency.
Cook additional kale and zucchini in a pan with a splash of water or oil until tender.
Cook the green peas and split pea pasta.
Assemble the bowl, top with more toasted pine nuts, salt, and pepper.
