Vegan Green Goddess Pesto Bowl

Ingredients

  • Split pea pasta
  • Kale
  • Zucchini
  • Green peas
  • Pine nuts

Pesto

  • 2 cups chopped raw kale
  • 1 handful parsley
  • 1 avocado
  • 1/3 cup toasted pine nuts
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 3 cloves garlic
  • Salt and pepper
  • 7 to 10 tablespoons water

Preparation

  1. Toast the pine nuts in a pan for a few minutes until golden brown.

  2. Add the pesto ingredients to a food processor, blend, and add water gradually to reach the desired consistency.

  3. Cook additional kale and zucchini in a pan with a splash of water or oil until tender.

  4. Cook the green peas and split pea pasta.

  5. Assemble the bowl, top with more toasted pine nuts, salt, and pepper.
