Vegan Pea and Coriander Pesto

Ingredients

  • 1.5 cups frozen peas, thawed
  • 1 cup coriander
  • 1/2 small avocado
  • 1/4 cup olive oil
  • 3-4 garlic cloves
  • 1 tablespoon dried basil
  • salt and pepper, to taste

Preparation

  1. Add all ingredients to a food processor and process until pesto is creamy.

  2. Cook pasta according to package instructions and drain.

  3. Stir the pesto into the cooked pasta and add your desired veggies.
