Vegan Pea and Coriander Pesto
Ingredients
- 1.5 cups frozen peas, thawed
- 1 cup coriander
- 1/2 small avocado
- 1/4 cup olive oil
- 3-4 garlic cloves
- 1 tablespoon dried basil
- salt and pepper, to taste
Preparation
Add all ingredients to a food processor and process until pesto is creamy.
Cook pasta according to package instructions and drain.
Stir the pesto into the cooked pasta and add your desired veggies.
