Green Goddess Nourish Bowl
Ingredients
- 8 oz extra firm tofu
- olive oil
- salt and pepper
- garlic powder
- Brussel sprouts
- peas
- zucchini, ribboned
- baby spinach
Green goddess dressing
- 1/2 an avocado
- 1/4 cup olive oil
- 1/3 cup water
- 3/4 cup packed basil leaves
- 1/4 cup chopped parsley
- green onion chopped
- juice of 1 medium lemon
- 2 tablespoons apple cider vinegar
- 1 teaspoon salt
Preparation
Press and slice your tofu.
Preheat oven to 300 degrees Fahrenheit.
Spray a sheet pan with avocado oil and add Brussels sprouts. Sprinkle with salt, pepper, garlic powder, and a little extra oil, cover with tin foil, and bake at 300 degrees, turning when needed until cooked through. Then remove from oven and set aside.
Add tofu to an air fryer, spray with olive oil, salt, and pepper, and fry at 400 degrees until crispy.
For the dressing, add all ingredients into a blender and blend until silky smooth.
To assemble, add all ingredients into a bowl with a big healthy serving of the green goddess dressing.
