Vegan Green Goddess Superfood Sandwich
Ingredients
Green goddess spread
- 1 ripe avocado, peeled
- 1/2 bunch parsley
- 2 TBSP raw cashews
- 2 TBSP hemp seeds
- 1 lemon, zested and juiced
- 2 tsp apple cider vinegar
- 1/2 tsp salt and pepper
- 1/2 tsp garlic powder
- water to thin
Sandwich components
- 8 slices bread of choice
- 4 TBSP vegan cashew-based chive cream cheese
- 8 leaves romaine
- 1 cup spinach
- 1 English cucumber, ribboned with a potato peeler
- 1 zucchini, sliced
- 1 large heirloom tomato, sliced
Preparation
Add all ingredients for spread to a blender and purée. Add 1 TBSP water at a time to reach desired texture. Should be similar thickness to hummus.
Toast bread if desired, spread goddess spread on one piece and cream cheese on the other.
Layer with remaining ingredients. Feel free to assemble in the morning and wrap up for a later lunch.
