Vegan Loaded Vegetable Bowl

Ingredients

  • Cauliflower
  • Olive oil
  • Garlic powder
  • Kosher salt
  • Cracked pepper
  • Onion powder
  • Field greens
  • Organic heirloom tomatoes
  • Asparagus
  • Vegan feta
  • Organic black beans
  • Organic brown rice
  • Red pepper flakes
  • Cilantro
  • Avocado
  • Vegan caesar dressing

Preparation

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Toss cauliflower in olive oil and sprinkle with garlic powder, kosher salt, cracked pepper, and onion powder.

  3. Spread cauliflower on a baking sheet and bake until just beyond golden.

  4. Sauté asparagus and season with kosher salt, cracked pepper, and garlic powder.

  5. Cook brown rice with olive oil, garlic powder, and red pepper flakes.

  6. Chop organic heirloom tomatoes, cilantro, and avocado.

  7. Assemble all ingredients in a bowl, starting with field greens as the base, and add the prepared cauliflower, asparagus, tomatoes, vegan feta, black beans, rice, cilantro, avocado, and vegan caesar dressing.
