Vegan Mango Lassi Popsicles
Ingredients
- 2 cups canned mango purée, or 3 cups fresh ripe mango, puréed in a blender
- 1 cup thick Greek-style vegan yogurt
- 2-4 tbsp maple syrup, to taste
- 1/4 tsp cardamom powder
- A few strands Spanish saffron (optional)
Preparation
In a large bowl, whisk the mango purée, yogurt, sweetener and cardamom powder together and adjust sweetener to taste.
To the chilled popsicle mold, add a few strands of saffron to the bottoms and sides of the cavities, if using. Fill the mango-yogurt mixture into the molds, dividing equally. Place the lid or popsicle sticks and freeze for at least 8 hours, or overnight.
