Vegan Pasta Bolognese with Lentils

Ingredients

  • 1 onion (chopped)
  • 1 large carrot (shredded)
  • 2 dl soy mince
  • 380 g lentils
  • 390 g tomato & basilika sauce
  • 2 dl water
  • A handfull fresh parsley
  • 1 tbsp mango chutney
  • 1/2 salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder
  • 1 tsp basil
  • 10-15 cherry tomatoes

Preparation

  1. Start frying off the onion, carrot and soy mince in a pan with some oil.

  2. Then add the rest of the ingredients and let the bolognese simmer for 20 min.

  3. Serve with spaghetti and fresh parsley on the top.

Notes

  1. Lentils are high in protein, magnesium, full of fiber and a good source of iron.

  2. Didn’t like lentils at first but now add them to many dishes like stews.

  3. This recipe is comforting and delicious.
