Vegan Peanut Tofu Noodle Bowl

Ingredients

Sauce

  • 2 tablespoons smooth peanut butter
  • 2 cloves garlic, minced
  • Handful spring onions, chopped
  • 1 teaspoon dark soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon maple syrup
  • Black pepper to taste
  • Chilli flakes to taste
  • Sesame seeds for garnish
  • Hot water as needed

Main

  • Noodles
  • Tofu
  • Greens of choice, such as cucumber

Preparation

  1. Combine all sauce ingredients in a bowl, add hot water to reach desired consistency, and stir until smooth. Taste and adjust seasoning as needed.

  2. Cook the noodles according to package instructions, drain, and mix half the sauce through them.

  3. Coat the cooked tofu with the remaining sauce.

  4. Serve the noodles and tofu together with greens of choice, such as crispy cucumber.
