10-Minute Lazy Vegan Peanut Noodles

Ingredients

  • 12-16 oz thick udon noodles
  • 1 cucumber (spiralized or sliced thin)
  • Sesame seeds (for garnish)
  • Scallions (for garnish)

Peanut sauce

  • 1/2 cup creamy unsweetened peanut butter
  • 1/4 cup soy sauce or coconut aminos
  • 1 tbsp toasted sesame oil
  • 1-2 tsp chili paste or sriracha
  • 2 tbsp rice vinegar
  • 1 tsp garlic
  • 1 tsp ginger
  • 1/2 cup hot water

Optional additions

  • Tofu (sautéed for protein)

Preparation

  1. Boil the noodles.

  2. Make the sauce and prepare the cucumber while the noodles are boiling.

  3. Rinse and drain the noodles with cold water.

  4. Mix the noodles with the sauce and cucumbers and add garnish.

  5. Serve and enjoy.

Tips

  1. Optionally, add sautéed tofu for additional protein.
