Vegan Polish Pierogi with Potato Filling
Ingredients
- 2 cups all-purpose flour
- 3/4 cup water
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt
Filling
- 2 cups mashed potatoes
- 1 cup roasted onions
- Salt and pepper to taste
Preparation
Mix the dough ingredients together and knead until smooth
Let the dough rest for 30 minutes
Prepare the filling by combining mashed potatoes and roasted onions, seasoning to taste
Roll out the dough and cut into circles
Fill each circle with the potato mixture, seal the edges
Boil in salted water until pierogi float to the top
Optionally fry or bake until golden
Notes
Pierogi can be frozen for later use and reheated
They are versatile and can be served warm or cold with various toppings
