Classic Vegan Cornbread with Non-Dairy Milk

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 cup non-dairy milk
  • 1/4 cup vegetable oil

Preparation

  1. Preheat oven to 400 degrees Fahrenheit

  2. Lightly grease an 8-inch square baking pan or cast-iron skillet

  3. In a large bowl whisk together cornmeal flour baking powder sugar and salt

  4. In another bowl mix non-dairy milk and vegetable oil

  5. Pour the wet ingredients into the dry ingredients and stir until just combined

  6. Pour the batter into the prepared pan

  7. Bake for 20 to 25 minutes until a toothpick inserted in the center comes out clean

  8. Let cool for 5 minutes before serving
