Vegan Spinach Macaroni Gratin

Ingredients

  • 2 tbsp of olive oil
  • 1/2 of an onion
  • 2 cloves of garlic
  • 200g fresh or frozen spinach
  • 1 tsp of salt (more to taste)
  • 1 tsp of pepper (more to taste)
  • 1 tsp of oregano
  • 1/2 tsp of chili pepper
  • 2 tbsp of flour
  • 500ml soy or other milk
  • 1/2 tsp of nutmeg
  • 150g macaroni
  • 3 tsp of vegan butter or 1/2 cup of vegan cheese or 1/2 cup of bechamel sauce

Preparation

  1. Sauté onion on olive oil for 3-4 minutes, add garlic and sauté for a minute

  2. Now add spinach and season it and let thaw or wilt if fresh for 3 minutes

  3. Add flour and mix well so that flour disappears

  4. Add milk and nutmeg and let cook for 2 minutes. Add macaroni cooked al dente

  5. Pour everything in an oven proof dish, add some more salt and pepper, sprinkle vegan cheese on top or vegan butter or bechamel and cook in the oven at 200C for about 25 minutes
