Zucchini and Zucchini Flower Tempura
Ingredients
- 1 zucchini
- Some zucchini flowers
- 5 tablespoons all-purpose flour
- 3 tablespoons rice flour
- 2 tablespoons cornstarch
- 5 tablespoons sparkling water
- 1 ice cube
- A good pinch of salt
Preparation
Heat the oil in your pan, pot, or fryer.
In a bowl, mix the flours, cornstarch, and salt.
Add the sparkling water and whisk to dissolve everything.
Add the ice cube and stir as it melts.
Dip the zucchini slices one by one into the batter and place them in the hot oil.
Do not overcrowd the pan to avoid cooling the oil.
Fry until well browned on both sides.
Remove and place on a rack with absorbent paper.
Sprinkle with fleur de sel and serve immediately.
If not serving immediately, keep warm in a 110°C oven for about ten minutes.
Tips
Rice flour and ice cube are important for achieving extra crispiness.
